I don't have an issue with the PT films in themselves - for me, it's just the terrible writing when it came to things already established in the OT. So trying to list them - what should have been adhered to in these films?
Anakin should been a "great pilot" and Obi-Wan should have been "amazed how strongly the force was with him": Not one unwitnessed pod race & midi-chlorian counted by someone else.
Obi-Wan should have taken it upon himself "to train him as a Jedi": No Qui-Gon at all, and no being told by Qui-Gon to train Anakin, and having it ratified by a council that he could.
Obi-Wan should have believed "that boy was out last hope": He should not therefore have been present at his birth, and in fact held him and his twin sister.
Obi-Wan should have been seen actually serving under Bail Organa's command at minimum at some point over an entire trilogy: He should not just have been poorly shoehorned in just as little more than a baby receiver.
Leia should have initially lived with her "real mother", one who lived on past their separation from Luke, and was "very beautiful, kind, but sad": She should not have been passed directly to Bail Organa from a mother dying immediately after child birth.
Any other genuine ones I've missed here? Let me know and I'll add them in...

Their mother should have lived past their births to when they were older. That Leia, in Jedi, remembered her mother and her sadness implied that she was old enough to recognize the emotions in others. There is no way that an infant, taken from their mother immediately, would remember that experience. None.

Maybe Leia did not actually know about Padme... ? She might have referred to Bail Organa's wife/Partner? Are we told when she died?

Well, you kinda have to imagine that Organa's wife was vaporized with the rest of Alderaan when the Death Star came calling. I'm sure a search will reveal her fate. I don't think that's who Leia was referring to, though.

Yeah, that's why I added the "real mother" line in the revised OP - Luke ask if she remembers her after telling Leia they're twins. i.e. she is quite specifically not describing Mrs Organa...
