I would like to address a very important topic. I think the set designers and wardrobe people deserve a shout out. Between Meemaw's lemon glasses, Mary's basket of lemons on her kitchen wall and Missy's multiple lemon shirts they have made sure that lemons are well represented. Hopefully this trend will rub off another shows.

Lemon pie is one of my favourite. yum The last time I had a slice was in the twentieth century.

metoo, but no "meringue" for me. That's just a lack of imagination, or something.

There's a type of lemon pie, some kind of southern recipe it seems, that bakes up with a cake-like layer on top. It probably has an "official" name but as kids we called it lemon cake-top pie.

Google search comes up with Lemon Cake Pie, and Lemon Sponge Pie.

Rock Springs Cafe, near where I lived for a while in Arizona, has something called Tennessee Lemon Pie which I've had a few times, that was also good.

Yep. That was the closest I could get when living there. Mom's "Lemon Cake-Top Pie" looks more like the "Lemon Sponge Pie" found through Google.

The main thing for me was, No Meringue! I don't like that on ANY kind of pie.
